StyleSoaking: First thing, 95% well-ripe, and 5% overripecherries were selected. The cherries are immersed in thewater tank to remove the floaters. After removing thefloaters, we allowed the cherries to undergo 4 hours ofsoaking in water.Drying method: The cherries are dried on raised beds. Oneach bed, we put 20 kg of cherries with thickness as thin aspossible. The raised beds were placed in locations with morewind blows and less sunlight. The drying goes slowly for 30days under the shade net.
