Description

One more unique coffee by the Colombian farmers and team of Café Granja La Esperanza! The group of farms that produce these coffees have been getting more and more popular over the years as they have been getting involved in plenty new varieties and experimental processing methods that show up in competitions around the world every year!
Samba Coffee Roasters travelled to Colombia once again and saw their great facilities firsthand. One of the coffees we tasted and chose to bring back home was Sidra!

Sidra is a hybrid of Red Bourbon and Typica. The coffee trees grow at an altitude between 1400-2000masl and once the picking is done they are fermented in large, open tanks for 48 hours. This allows the cherries to produce more sugars which are vital to the lovely boozy effect we find in naturally processed coffees. The people of Granja are so meticulous that they measure the temperature of the tanks every 6 hours to ensure the temperature doesn’t go above 30°C. After the initial fermentation stage, the cherries are moved into mechanical dryers for another 48 hours and finally they rest under the sun for 8 days.
