These Geisha beans have their origin in Las Margaritas farm, in the region of Valle del Cauca in the municipality of Caicedonia. The farm, located at an altitude of 1800 masl produces high quality coffee cherries since upon harvest, they select only the most ripen and sweet Geisha cherries. When the harvest is completed, the process of fermentation begins, and it is one of the most critical stages of the coffee journey. The experimental yet innovative process of Napoleon used in Las Margaritas farm by the Granja’s team is called ‘Hybrid washed’ and creates an outstanding cup profile of complex acidity and juicy body with notes of tropical fruits, pineapple, blueberry, rum and plum. This technique begins with a seven-day controlled fermentation in sealed plastic tanks with controlled temperature and no access to oxygen. The coffee is then dried for six days in controlled temperature in silo; this fast, controlled drying process, guarantees an intensified outcome for these Geisha beans in terms of flavors and aromas!
